Looking for an easy breakfast with lots of protein that eats like a quiche? This is it. I take an extra step and use the immersion blender so the cottage cheese isn't chunky and fill the tortilla base with protein and veggies before smothering it in the cottage cheese and egg mixture. Garnish with green onions and green chili corn salsa and it's so good and so filling!

This is a great character driven historical novel with lots of Midwest references. He even mentioned Des Moines. Touches on topics of race and sexual abuse.
